3 cup of vegetable broth
3 cup couscous
2 garlic cloves
3 sprigs of basil
1 teaspoon of Italian seasoning
1 tablespoon of salt
1 teaspoon black pepper
1/2 diced sweet onion
1 diced red pepper
2 cups of grape tomatoes or 1 can of diced tomato
1/2 small can of diced black olives
2 tablespoon of oil
1/2 package of ground Tofurky chorizo
Make Couscous according to package.
Sauté basil, pepper, garlic and Italian seasoning for about 3-5 minutes. Add red peppers, onions, olives and tomatoes and sauté for another 10 minutes. Finally, add chorizo and couscous. Mix together until heated.  Salt to taste.

About the Joyful Vegan Feast

The Joyful Vegan Feast is a cooking class, taught by Pastor Brian Merritt, at the Mercy Junction Justice and Peace Center on Saturdays at 3 pm. Join us any Saturday for the class at the Center, 1918 Union Ave. in Chattanooga TN 37404. If you can’t join us for the class, we’ll upload video from the class every Tuesday evening.

The Joyful Vegan Feast takes its name from a line in the Presbyterian communion service. We are reminded that all people will come together in unity from East, West, North and South to sit at table with each other, Luke 13:29. “This is a Joyful feast of the divine’s people.”

A vegan diet consists of fruits, vegetables, nuts, grains, seeds, beans, and the thousands of other good things the earth provides to us. What it doesn’t include is animal products — flesh, eggs, milk, honey, etc. Veganism goes much further than simply dietary choices. Veganism is the belief that humans do not have the right to steal the lives, freedom, reproduction or bodily products of non-human animals. Explicit in such theft is violence. As a community radically devoted to peace, veganism is an expression of our faith at Mercy Junction.
